Pork and Tomato Base
1 tablespoon vegetable oil
1 pound pork shoulder steak, cut into about 12 large chunks
1 tablespoon vegetable oil
½ large yellow onion, sliced
3 garlic cloves, sliced
1 cup chicken stock
One 28-ounce can crushed tomatoes
1 cup Master Kimchi Base (here)
MAKES 1 QUART
Iâve always loved the combination of pork, tomato, and kimchi, and I have been tinkering with it for years now in a professional setting. They just jive. I think it reminds me fondly of the classic spaghetti and meat sauce I grew up eating, with the kimchi thrown in to help me acknowledge, finally, that I am, in fact, Korean. A few years back we served a very popular stew at Serpico that juggled these powerful flavors with a few unexpected flourishes, like heirloom citrus, squid, and mussels. This recipe is a more accessible variation on the same idea. In addition to being cheap, a pork shoulder steak works really well for this, because you can get all the flavor without having to spend time trimming away the skin and bones that often accompany whole shoulders. This base can be enjoyed on its own, mixed into rice, but it also supercharges my Baked Eggs (here) and Seafood Stew (here).
